Magic hat #9
Has anyone ever brewed a Magic hat #9 clone (or apricot ale in general)? Would it be better to use an apricot puree, extract, or dehydrated pieces?
I am already thinking about my next brew!
I haven't. The closest I have ever had was Pyramid Apricot Ale. Personally, I hated it so much I will never drink another one even similar.
As for fruit, I only use real frozen fruit. Never used puree, but heard it works fine. Extract really depends on who makes it as to the quality. Cellar Pro makes a good cherry extract, but their blackberry SUCKS. Even though real fruit costs more, I find it much better. The last lemon ale I made I put in 10 chopped up lemons and it turned out awesome.

never have, but im a huge fan of Magic Hat brews, unfortunately #9 is one of my least fav.

1/2 lb Crystal 60 steeped
5.5 lbs light DME
1/2 lb wheat DME
~ 1.5 oz Tett for 60
~1/4 oz Willamette for 15
~1/4 oz Cascade for 15
(should be ~25 IBU)
Yeast: 1056
3 oz Apricot flavoring after primary
Thanks for the recipe, cmanley. Normally I am not a fan of fruity beers, but MH #9 is the exception. The problem with it is that it lacks consistancy. Sometimes you get a bottle or glass that taste fantastic and other times it is utterly disgusting. Maybe you guys who hate just got a bad batch?
The trick with fruit beers is to make a good beer first, then add the fruit flavoring. The fruit won't cover up for a junk beer to begin with. I hate most fruit beers, or anything with a "gimmick" ingredient as a general rule, but there are a few exceptions.
Just got done helping a freind with an apricot wheat beer. Never done one before, figured it sounded ok and Pyramid's isn't too bad. If his turns out ok might try one of my own. Used:
8lbs. Light malt extract syrup
1lb. wheat grain
1oz UK kent goldings (boil 60 m)
1oz UK Kent goldings (boil 15 m)
and Wyeast American Wheat yeast
adding apricot extract from williams before bottling.
Very simple seemed like it will be a fairly decent light beer, I think the wheat will "round out " the apricot flavor nicely, but we'll see.

I brewed this a few weeks ago and it turned out very good. The only difference was that I had to substitute most of the hops due to inavailability. I think I sub'd Sterling for Tett and Columbus for Cascade. And the Columbus gave it a little too much bitterness. I also only used 2 oz of apricot flavoring in the secondary to make sure that it did not have too much apricot flavor. (I can alway add more) It gave it just a hint of flavor and sweetness from the apricot. I think 3 oz would have overpowered it with apricot.
Definately one that I will brew again.
