Mash Schedule: Temperature Mash w/ Rice
Total Grain Weight: 5.50 lb

45 min        Step 1             Add 6 qt of cold water-Heat to      104.0 F       
30 min        Step 2             Heat to 120.0 F over 10 min         120.0 F       
30 min        Step 3             Heat to 150.0 F over 10 min         150.0 F       
30 min        Step 4             Heat to 158.0 F over 5 min          158.0 F       
10 min        Step 5             Heat to 170.0 F over 10 min         170.0 F       

Sparge with 6 qts. @ 170F

Notes: Pre-cook- whole rice for 30min, with a grain/water ratio of 1# to 2 qts water. 
       Let cool to under 100F, add cold water @ Aprox. 1# to 1-1/2qts water for additional   grains. 
       Add grains, mix thourghly.  This makes a thick starchy mash. 
       Heat, while stirring, to Step 1 heat.   
       Between Step 3 & 4, let rest at 154F for 10 min.

Whatever AA% hops you use keep the IBUs around 30, the spruce does some bittering.

The spruce candles/tips must be early, fresh, Spring growth with no sign of hardening. You should be able to take a bite, chew & have a pleasant taste.  They freeze well, and will be good until the following Spring.

The rice thats just regular store bought brown rice? Or is it rice hulls or flaked rice?

Also have you ever used spruce extract in this recipe? My LHBS has this but its not real informative on how mush to use.

 

Yeah, just plain old store bought brown rice.
I do not recommend the spruce extract.   Of course, I've never used it. 
Just read about some folks trying it with not good results. 
Go natural, you can taste it & get a feel for how it will taste in the brew.
Patience, wait for the real stuff.  Besides, it's free. wink
