Mushroom Mead/Cider
I was wondering if anyone has any recipes for culinary mushroom cider/mead. I once heard about someone making it but I cant seem to remember where I read it or find any recipes on the topic. I was hoping to have at least a rough formula down by Samhain. any help someone could give would be great.

1. Easy Mushroom Mead
Bring 2 gallons of water to a boil
Add 4 pounds of honey
Add the juice of one lemon
Skim off the foam from the boiling mixture
when you see no more foam, lower heat
Wash 1 ounce of mushrooms, chop them up, drop in the boiling honey water. (this will sterilize them)
take this off the heat and keep covered. (I would wash and chop while the H20 is coming to boil).
stick this in a cold tub of water to lower the temperature to room temp
(ice in the tub helps).
pour this mixture into a fermentation vessel
add yeast
cover with an airlock
rack two weeks later
bottle when fermentation stops.
I have made Mushroom wine with kayro syrup (instead of honey as one would use for mead) and used my favorite mushroom. I bet you can figure that one out and I didn't feel like I needed a pound of that type. They were quite strong if you know what I mean. They were dried when I used them. I find that taste of this mushroom wine reminds me of some type of rice wine. Perhaps the mushrooms were grown in rice? I don't know.
Since dude is using dried mushrooms, perhaps he should just use a once. I will edit my previous post.
