My Recipe of Elderberry Wine
I have my own way to make I have been making elderberry wine and it comes out nice and smooth and you get one batch of regular and one batch of blush.
Put 1 1/2 gallons of frozen elderberries into a pillowcase in a non-reactive pot that will hold at least 4 gallons. When the berries are thawed boil 2 gallons of water and pour into the pillowcase then zip it up and put the lid on it. Let it sit for 24 hours covered. In a sauce pan bring to a boil the following
6 fl oz can frozen orange juice, 5 cups water, 2 table spoon of sugar, 1/2 tea citric acid and
1/8 tea epsom salt.
After the 24-hour wait put the juice from the elderberries into your primary fermented. Allow the juice to drip from the pillowcase but DO NOT SQUEEZE THE ELDERBERRIES. You will get a nasty green skum if you squeeze and it taste bitter. Put the pillow case back into the container and put another 2 gal of boiling water in and this will make another 5 gallon batch of elderberry blush.
In the primary add 6 cans of Welchs White Grape Juice. Bring the water level up to the 5 gallon mark.
Add sugar to bring the SG up to 1.090 - 1.095 about 8 lbs Add acid blend to get the acid level to 0.65% about 4 tbls Add 2 tbls yeast nutrient. Add your starter stir well and keep in a warm place. Rack in one week and put under an airlock Rack again in 2 more weeks. Rack every 2 months until clear
Add wine stabilizer and bottle.
I like to add 1/2 to 1 cup of light corn syrup mixed with 1 - 2 cups of hot water at bottling to give it an even smoother taste. Repeat the above for the second batch of blush. If you have further questions please email me.

Hello Erick. That sounds very appetizing.
I was wondering how you prepared the pillowcase for use in the process for the first time. I’d think a pillowcase from a home linen closet or even from the store may have traces of detergent or fabric softener which wouldn’t enhance the flavor, and may threaten the fermentation.
Is there a specific soaking or rinsing you’d recommend?

I think I would use muslin or cheesecloth instead of the pillow case.
