Need a couple of FAST recipes
Yeah, yeah, I know, it takes time.... but I need recipes I can force ferment for a faster end product... I have until Memorial day.
Anyone have any quick maturing recipes, tips, ideas?

Are you kegging now? I've got a few I can get fermented, kegged, & carbed in 3 weeks.
A wheat usually works well, they're pretty good young. Using US05 you'll get fast fermentation.

Yeah, I finally took the plunge into the kegs. Still love my pretty bottles lined up all nice and neat, but they were a pain to haul around.
Thanks for the yeast tip! I'll see if I can get my hands on some.
brew low gravity ales. they don't need as much time to age. also if you have Papazian's "Microbrewed Adventures" book, he has a recipe for an African sorghum beer that you drink while it's fermenting. I have no idea how good it is, but it is fast. He also suggests trying it with barley instead of sorghum.
