Need Ideas - Extra Special Roast
I was doing an inventory of specialty malts, and came across a pound of Breiss Extra Special Roast. Don't know why I bought it. It sez use for dark, high gravity ales & lagers.
So, started looking for recipes.
Can't find any.
Well, I don't really do much high gravity stuff, usually stay around 1.050 OG.
Any ideas?
You can use it in anything you want add some toasty, biscuitness to. I'd say something English, like a brown ale or a brown porter. I use home toasted malt, biscuit, victory and brown malts in stouts, porters, brown ales, and English pale ales and IPAs.

I like the idea of a Brown Porter, I'll look at some of those recipes & sub the Xtra for one of the Caramel/Crystals. It's also a lower ABV style. Looks like a good winter brew.
Maybe a touch of spices????
This is what Sam Calagione is doing with his http://beeradvocate.com/fests/ebf_comp so if you happen to have some pecanwood smoked malt, plantain flour, and carob laying around, then you could brew this one up!!
I use it in my bitters. It adds a nice touch to a hoppy American brown ale too.

I have never used this, but judging by its description of burnt sugar and dried fruit, and 130L - I am going to say it is probably real close to special B. If you were to put a # of special B into a 6 gallon batch it would probably be very dominant and perhaps cloying. I would think for the initial trial run you may want to consider a smaller amount. If it were mine I wouldnt go over 1/2 # the first time. Just my $.02
Actually, I thought, "that's a lot of a new kind of malt" when putting the grain bill together.
Maybe 1/2# Xtra, & 3-1/2# Pale 2 Row.
Takes the IBU & color to around 24.
Probably not brew this until sometime next week.
I always taste the grains I'm going to use to see if I like what they offer.
that's how I found out I really like munich malt, victory malt, and honey malt.
