Need urgent help on packing beer for competition




Can anyone could help me walk through how to pack the Unpasteurized Craft beer for competition?



I just start my small scale Microbrewery for selling within our premise. We are currently producing Phuket Lager, Dark Ale and Oriental Wheat. All of our beers are the blend of Western ingredient and Thai ingredients.
Recently, I got recommended from the vice-president of Belgium Craft Beer association to submit my beer for competition in Singapore on June 15, 2011.  I will have to send to Singapore by June 12, 2011 and they will store in the chiller for all competitors. So, with all transportation duration, I will have to try my best to keep my beer fresh in a bottle at least 6 days.

Therefore, I need help on how can I transport these beer without Contamination and still keep my beer Sparkling & Fresh.

My initial plan is to pasteurize swing top glass bottle 90C for 45 min, then fill with Unpasteurized Craft Beer into a bottle. Then, pack in foam box & pack with lots of dry ice. Then, FedEx to SG.

I'm looking forward for any advise from everyone here.

Swing tops are a bad idea I would think.  Regular crimp caps are less prone to leakage.
Dry ice is the worst idea, if the beer freezes it will break the glass bottles.

Simply wrap bottles in bubble wrap.  One layer is all that is needed.  Then fill a box with some packing like wadded up newspaper. Lay the bottles in side by side and pack all around them with newspaper.  Then top off with more wadded newspaper.  The key is to keep the bottles from moving at all in the box.  You could like the box with a plastic bag prior to packing in case of leakage.

If you have normally packaged beer in bottles by "pasteurizing" the bottle first by all means do that.  I think that a soak in no rinse sanitizer would be fine as well, and easier.  Most other craft brewers are bottling unpasteurized beer, so its not that odd of a thing.  I wouldn't be worried about contamination.

 

Hi there, thank you so much for your help.  I just now order a crown cap & crown capping machine for the filling.

One last question. When I fill the bottle with my craft beer from the tap. Is there a way to prevent CO2 lost during filling or boost up the CO2 back into the bottle?
