Oaked-Caramelized Heavy Scottish Ale-ish




Brewed This up today-

Batch Size (Gallons): 11
Original Gravity: 1.088
Final Gravity: 1.020
IBU: 81.4-ish
Boiling Time (Minutes): 90

Grains

33 lb Pale Malt (2 Row)
1  lb Aromatic Malt
1 lb Biscuit Malt
1 lb Caramunich Malt
1 lb Special B Malt

Hops
3.50 oz Chinook [13.00%] (60 min)
3.00 oz Chinook [13.00%] (45 min)
3.00 oz Chinook [13.00%] (2 min)
(i have a massive bag of chinook i'm trying to go through, so those weights maybe on the light-side of reality)
Mash at 154º For 90mins

First 2gal from mash were reduced to around 1/2gal, so pretty thick.
Am using two yeasts for this (split the 11gal between two fermenters- Safeale-05 and -04
Plan is to toss in some medium oak chips in a week or so?

I've made something similar before, but no oak chips and not as high an o.g.

How do you think this will turn out, thoughts suggestions?
When would be the best time to add the oak chips, haven't used them before.



 

Wow. A Scottish IPA. I like Chinook and I think you will have more than enough malt to support the hops so I think it is probably going to be damned tasty. As far as the oak goes I am clueless. I haven't used it brewing, as far as that goes I have never had a beer that has been oaked. From what I have read it sounds like the chips flavor the beer faster than cubes, probably because of the amount of surface area available. So probably keep an eye on it so you don't end up with a beer that tastes like acorns. smile

 

Hehe yeah, I'm a big fan of Stone's Arrogant Bastard, so this is modeled slightly after it, but with more caramel and hops.
