Kegged it today, didnt taste much maple or cinnimon
FG 1.011
Cracked open my first bottle today. It tastes pretty bitter and again, no cinnamon or maple flavor. It has a boozy kick to it, even though the ABV isnt high, it tastes like there is some bourbon or vodka in there... kinda hard to explain. I also feel like it is lacking something in the flavor department, though I can't pinpoint it. I am sure a few more weeks in the bottle and it will work itself out.
I don't notice much of a difference in body by using the carapils. My carbonation is fizzy, like a can of soda. It pours a giant head when poured in a pint glass. The bubbles aren't thick, though.. it is like an airy soda-like foam.
Dare I say I don't think this is one of my favorites. I am a bit disapointed in how mine came out. Anyone else?
I just bottled this on Wednesday. I strayed from the given recipe a bit (not by choice, but rather by accident). I put the full amount of Maple Syrup into the primary and then added even more at the secondary.
Our tastes when we bottled showed that there was practically no cinnamon flavor, but there was a hint of maple syrup to it. There was actually a smokey flavor along with it, which was odd.
Its got a total of three weeks in the bottle before I open one. I haven't had much luck opening bottles before 3 weeks, so my general rule is to bottle and forget for a while. I'll update everyone when I open the first one.
based on carbonation or green flavor, webby?
green flavor
Bottled last night. Not sure there's much maple flavor there, but it has a nice bitter/dry taste.
I just tried one the other day as well. It was fairly full bodied but did seem to finish somewhat dry as was expected. It is a difficult one to pin point different characteristics in but it may just need some maturation. I did pick up a very subtle smokiness to it as well. It's one of those beers that seems a little odd at first, but becomes more interesting the more of it you drink. I think given time the subtle nuances and complexities will come out more.
Hey everyone.....New to the forum and new to brewing with maple flavor.
Im hoping that I could get some input regarding a few issues.
1)I understand that the best syrup for brewing is likely to be the dark or extra dark. However, has anyone had success using maple extract?
2)how much syrup or extract would you suggest for a 5 gallon batch of ale.
3)I was expecting to add the syrup to the secondary fermenter.......appropriate?
Thanks in advance for your input.
for this recipe we split the pound between the primary and the secondary, so far most of the observations are that this didnt produce enough of a maple flavor, i would even consider doubling it if i were to try this again. same for the cinnimon, we should have used more
If I was to do this batch again I would bottle with either 3/4 c.maple sugar or 8 ozs. pure maple syrup in addition to the other amounts used.
