Ommegang clone- dartgod are you out there
Keeping up w/ the reputation of dartgods response to the call of recipe duty, thinking about an ommegang red label clone. Anyone brewed it or have a recipe?
And the clock starts ticking....
He is searching files as we speak.
Edit- I found one in BYO's 150 clones, I lokked it up as Ommegang brewery, I should have been looking for Brewery Ommegang. It uses a 5 step mash though, my second round w/ HERMS this friday, I don't know if I am bold enough to attempt a challenge for my HERMS so quickly, but then again that is what experiments are all about right?

This is what I got, I wrote down the amounts but am doing the directions from memory, think they're right.
5 gal batch
6gal boil
5# 9.6oz Pilsner malt
2.25# Aromatic
1# 6.4oz crystal 20
2.25# Briess Special roast
2.66# corn sugar
.25oz caracao orange peel
.5 oz licorice root
1.25oz styrian goldings 60
.33oz styrian goldings 0
wyeast 1214 belgian ale
Step mash
113 for 10 min
144 for 10 min
154 for 15 min
162 for 15 min
169 for 5 min
Ferment 68-70 bringing temp to 76 after 3 days
Secondary at 28 deg 14 days
I plan on a 13.5 gal runoff, so I multiplied this recipe by 2.25
I plan on propogating the yeast from a bottle I bought last night, I am hoping to step it on the plate and have enough ready for next friday.
I did also read that Ommegang uses Wyeast forbiddin fruit instead of the 1214. If my colony does not take off I will try pitching that.
I also cant see secondarying at 28 deg, so I will crash it to 34 deg and keep it there.
Just finished ordering the grains and happy my friends at High Gravity had styrian goldings in stock... this shortage is scary stuff.
Buy as much of the Styrian Goldings you can and I do have some recipes from my British brewing friends that use that hop.......one of the recipes is quite popular with the homebrewing crowd there.....it's called Styrian Stunner, they use the Styrian hops sort of like we do Cascade....
