Pomegranate Sweet Mead

14 lbs. honey
0.75 tsp yeast nutrient (starter)
Wyeast 4184 Sweet Mead yeast
100% not from concentrate Pomegranate juice

3-4 days prior make 2 L starter with 200 g light dry malt extract and 0.75 tsp yeast nutrient.
Cold crash over night and decant
Mix honey with 1 gallon water and slowly heat to 160 and hold for 20 minutes
Add to fermenter with enough pre boiled and cooled water to reach a volume of 6 gallons.
Ferment at 68 F for approximately 3 weeks
Transfer to secondary and age for 2 months
Add juice to taste and continue to age for about 3 months

Will have a bit of secondary fermentation due to juice so stabilize with pottasium sorbate if desired or just age out in fermenter.
