Rasberry Beer
Now that I've begun to brew and have successfully made some very tasty beers... I've been trying to find a good recipe for a Razzberry!!! Beer... I'm a little worried about trying with fresh fruit.... any good tips... TheJet
What type of brew are you adding this to? I have done one fruit beer, it is my Raspberry Java Porterhttp://www.free90free.com/ccbc/huskerag.htm I used Raspberry extract in my brew and it tastes great. I have heard of others who have used the extract in lighter beers and it comes off medicinal. The reason I worry about using fresh fruit is the possibility of contamination and the addition of Pectin haze if not dealt with properly.

Here is the raspberry beer I make:
8-9# 2 row pale, sometimes I will add in 1# of wheat or crystal 20L or 60L, but usually just pale.
Mash in between 148-152, mash out at 170. I vary the hops, but I aim for anything under 6% AA, such as willamette, halletauer, saaz, sterling, crystal, etc.
After 1 week in primary, I take 6# of frozen berries. Now I like a hazy beer, so I boil the fruit in a quart or 1/2 gallon for about 5 minutes and add it to the secondary. If you don't like hazy, don't boil it. Does not affect the flavor.
After 1 week in secondary, if you keg, rack your beer between 2 vessels at least twice, otherwise, the pulp will plug your keg. If you bottle, don't worry about it.
I use different yeasts in my batches. 1275, 1318, 1098, just whatever sounds good.
The berry flavor isn't overwhelming. It is there though. The recipe I read called for 4#, but I like the flavor, so I added more. Just experiment.

I use frozen fruit. Never had a problem with contamination. And I boil my fruit all the time. There is absolutely nothing wrong with the pectic haze. I read this debate somewhere else. "Never ever boil or you get a pectic haze"... uh huh, like that's a bad thing?
All it does is give a haze. I have tried it boiled and frozen. Tastes the same after a week.
If you want a hazy beer like me, boil it, if not, simply don't. If you are going to use fresh fruit, you should wash it. If using frozen, don't worry about it.
One thing to remember is that if you use real fruit you'll probably get some nice color added the beer. If you are looking to make a pale beer, say a pale ale or a wheat beer, you might be better off using the raspberry extract. I've used both real fruit and the extract, the taste wasn't too much different, but the color and clarity sure was.
