Rice experiment #2
Here's the break down on what I hope to be a dry light ale.
3# Ultra Light DME
3# Rice Syrup Solids
1# Light Clover Honey
1/2# Flaked Corn
1/2# Flaked Rice
1oz Perle 7% pellet hops
regular ol' dry Muntons Ale yeast made in a starter 48hr before brew time
Mashed flaked rice & corn for 1 hour at 155 in 3g water. Strained through fine collander and heated water to 180 and sparged grains. Boiled down to 2g then added DME & rice syrup solids and brought back to boil. When back to roiling boil add hops and boil for 1 hour. 15 minutes before flame out add 1# honey & Whirfloc tab. Strain, add cool tap water to make up 5g or wort and pitch yeast.
I may dry hop with 1oz 4.6% Liberty hops but not certain yet.
Will have an OG for ya at end of boil. She's on the stove as I type.
Can flaked corn and flaked rice convert itself?
I am not sure. Were you able to perform an iodine test to see if it did covert?
If it didn't convert perpare yourself for a vey hazy brew, with some slickness on the tongue.
Hazy isn't an issue. At least it hasn't been in the past. As for converting itself. I have no idea. I have been spending a lot of time down at a local micro brewery and the master brewer is in love with flakes rice and corn. Never seen him add any type of enzyme. He just mashes and sparges it. He says it helps dry out the beer w/o adding any heavy flavor. As well as helping make a better head and smoother mouthfeel.
OG = 1.075
Why use flaked rice AND Rice syrup solids? Do they do different things? Also instead of flaked rice and flaked corn couldn't crushed corn and boxed rice work?

BTW, the ferment started within an hour of pitching and is rockin and rollin.

Doesn't he mash it with the grains???? That's why he wouldn't have to add an enzyme......the enzymes are in the grains.....
I did a little research last night. These adjuncts essentially have no diastatic power. When your brewer friend is mashing these he's doing it in his tun with base malt.
Please report back with the results after fermentation. I predict a high SG after fermentation.
Next time mix these with 1-2lbs of 2-row to get them to convert.

Ferment was violent. And even after sock filtering the wort I had about 3 pints of blow off. It slowed enough to remove the blow off tube and install an airlock.
how much do rice syrup solids cost per pound?
