Rogue's Dead Guy Ale Clone Recipes




Ok I think this is straight out of the Beer Captured recipe book and scaled to 5.5 gallons at 75% efficiency.

Pacman Yeast but if its unavailable use WLP001, Wyeast 1056, US05

To harvest Pacman yeast from Rogue's bottles:

I started with two 22oz bottles (Brutal Bitter and Chocolate Stout) and left about an inch of beer left in the bottoms of each of the bottles.  I added starter wort to the bottles twice before pitching the yeast into a flask.  The first wort was 1 ounce DME and 8oz water.  Once that fermented out I cold crashed and decanted and stepped it up to 2 ounces DME and 16 ounces water.  After that had fermented I had a decent amount of yeast in the bottoms of each bottle and I cold crashed both bottles, decanted and pitched the yeast into a 4oz DME, 32oz water starter (about 1L) and tossed it on the stirplate for a couple of days.

I've only brewed the first recipe and its really good.  A clone? Eh, its close but its really good; definitely  a crown pleaser and it ages well.



 

You have got to love Rouge, they print their recipe on the bottle.
We use 2 (Glow in the Dark)" Dead Guy" growlers as a Halloween decorations every year, I got this off them.

8 Ingredients:
Malts: Northwest Harrington, Klages, Maier Munich and Carastan.

Hops: Perle and Saaz.

Yeast & Water: Rogue's Pacman Yeast & Free Range Coastal Water.
Specs: 16º PLATO
               40 IBU
               78 AA
                16º Lovibond

 

Ive got the real recipe straight out of John Maier's mouth himself-
Dead Guy Ale Clone: for 6 gallons
O.G. 1.065-15.9*plato
F.G. 1.014-3.6*plato
6.7% ABV
49.4 IBU
Color 7.5*L
10.58 Lbs.Two row
3.57 Lbs.Munich
1.53 Lbs Carastan
-Hops in Pellets-
1.41 oz. Perle hops(boil)90 minutes-7.5% AA
1.13 oz Sterling hops(aroma)1 minutes-7% AA
60 minute single infusion mash at 152*f.Mash-out at 168*f.90 minute boil.
Wyeast 1764 Rogue Pac-man yeast.Wyeast yeast nutrient.Aerate well.Ferment
at 60*f for 2 weeks
Now can someone convert this to Mash/Extract for me?lol

 

I was looking at the website and it looks like they switched the Sterling with Saaz.That recipe is from a couple of years ago and brewers always tweak Ingredients.
