Son of Saison
Looking to brew this as an extract. I have found 6lbs of German Pils on morebeer.com and the hops on other sites. Can I do the Briess 2-row and the Durst Wheat as a grain bag simmer? Also I would replace the corn sugar with belgian candy sugar for more authenticity. Any help would be great thanks!!!

8lb. Durst Pilsner
2lb. Briess 2-row
1lb. Durst Wheat
0.5lb. corn sugar to boil
1oz Spalt 60 Full boil
1oz Hersbrucker 30 min left
2oz Spalt 5 min left
1 Orange (Tangelo) peel 10 mins left
1 TBS Coriander 10 mins left
Pintch of Grains of Paradise

Did you mean to say that you found pilsner malt as an extract on more beer? And you are wondering if you can steep the 2-row and the wheat?
Well the wheat and 2 row need to be mashed, but its not a big deal.
Fill a pot with 1 gallon water to about 158F. Put the crushed 3lbs of grain (2 2-row 1 wheat) in a large grain bag. Add a little more heat if needed to acheive a final temp of 154ish degrees. Let it sti for 30 minuntes.
Pull out the grian bag and let it drain into your brew pot. Pour the remaining mash water (grain goodness) into the brew pot too. You can rinse the bag with 2 quarts of water if you want, just don't squeeze the bag out.
Should be fine that way... and welcome to mini-mashing if you go this route.

Found the wyeast strain @ the LHB store. Thinking also, that i can harvest the yeast from a fresh opened bottle of Ommegang Hennepin. How would that be nest accomplished? Thinking just pitch the slurry at the bottom of a 750ml bottle of the next one I open into a good starter. Thanks for the help.
