Sour recipe
Hi guys,
Does anybody have a good sour beer recipe ??
What do you consider a sour? The category is wide open from berllinerweiss to gueze. If you are speaking of a Belgian sour, then you need to consider how much time you are willing to invest. I have added a sour culture and Brett to a saison and had it ready in 3 months, or I have a soured pilsner still in primary since dec of 2008, that I will be blending with.
Once you determine the time, then you need to determine your method and procedure. Great stuff and IMHO well worth the time and effort. 2 years may sound like a long time, but if you do not start now you will never know!
Thirsty's right. Asking for a sour recipe is about as vague as asking for a lager recipe. There's several different sour styles out there. Is there a certain beer you like and want to try to replicate?
Thanks guys you are right I did not know that there where so many styles. I just went by what somebody else told me while we where trying a Lambic. I dont like too much hops on my beer and prefer wheat beers over other types.
I think I should try a few before I jump inot making one and when it comes time for me to do it I wont mind waiting. "Good things come to those who wait"

Ok so I tried Bourgogne des Flandres brown ale. BA gives it a Decent rating. It's not bad but I would rather drink a Lambic. It was too sweet for my taste. Kind of like cherry cola- ish overall impression.
I'm looking for something less sweet and more tart.... Maybe an unblended Lambic?
Try Duchesse de Bourgogne; its Flanders red that's a little sweeter than most but it has that tartness I think you're looking for. Also seek out Rodenbach's Grand Cru, another Flanders Red. It's probably my favorite sour.
Lambics are hit or miss with me. I like the sourness but I don't dig barnyard funk so I stay away from anything from Boon. See if you can locate some Cantillon like their Classic Geueze and Iris.
Also, I'd recommend the sours from Russian River if you have access to them.
German Berliner Weisses might be a style you'd want to check out too.
