Spicing Up a Nut Brown Ale
Ooops, too late for a recipe.
What recipe did you end up with?
I went with the listed recipe, and added a crushed 1/2 licorice root, 3 arms off a small star anise, and adding two tablespoons vanilla extract at 1 minute (the store was out of vanilla bean).
My hope is that the spices will not completely overwhelm the beer. So far the smell from the fermentor has some sweetness, but otherwise seems fine.
Oh, and the yeast actually built up enough krausen to over-flow a 6.5 gallon fermentor! I've never had that happen before...might be time to go back to blow-off tubes.
