Strawberry Blonde




Yeah, I might give the honey a go.  What kind of flavor difference does the honey make when priming compared to just regular corn sugar?

Also, I searched high and low for some canned strawberry puree without any luck.  So, I figured why not buy some frozen strawberries and make my own puree.  My plan is to steep the berries like described on this post and then mix thoroughly in a blender.  Then I'll just add this straight to the secondary and rack like usual.  My question is this...how many pounds of strawberries should I use for the puree?  It was mentioned before that when you are adding the berries to the secondary in grain bags that use should use about 5-6 pounds.  I bought 5 pounds of frozen berries, but would assume that I wouldn't use as much with the puree.  I could be completely wrong on this or maybe it just depends on the amount of strawberry flavor desired.  I'm looking for something similar to Pete's Strawberry Blonde.  Any suggestions?  I've got high hopes for this one and don't want to screw it up.

The frozen berries that I get are flash pasturized prior to freezing so they don't need to be steeped.  I used to do the steep, but I don't think its really necessary anymore.  I would just blend the frozen berries into a slushy type consistancy.  Let it thaw a bit in your blenders pitcher then put it into secondary.

Pete's Strawberry blond is made without any fruit.  Its all done with commercial grade flavorings.
I don't have the link handy but you should listen to the Pete Slosburg podcast on the brewing network.  Amazing stuff and he talks about Pete's Wicked Strawberry Blond.

Thanks for the input, Brewchez.  I'll check and see if the ones I bought are flash pasturized as well.  If they are, then that will even make things easier.  Do you recommend that I use all five pounds of strawberries for the puree or should I do less?

This is exactly how I did it with 4 lbs. of frozen strawberries. It was quite a mess though, you definately need to go into a third fermenter.  In fact I even transfered through a mesh filter during bottling. The batch has only been in bottles for a week but from early tasting I'm guessing there will be no shortage of strawberry flavor. it might even be a bit much for me but I'll see in a couple more weeks.

Don't do anything else in brewing until you check it out.  There's that much information available there.

Brewchez, have you racked to your secondaries yet?  How did that go and how much fruit puree did you use?  I was thinking of doing about 3 lbs worth of strawberry puree.  From what couplebeers mentioned, it sounds like 4 lbs might be a bit much.  I'll be taking care of this tonight.

 

I just racked this one to a third fermenter and I can't wait to try this one.  Based solely on the smell and appearance this is going to be one tasty brew!  It smells fantastic and the strawberries gave it a nice pink hue.  I'm going to give it a few days in the third and then run it through a filter to to clean it up a bit before bottling.  I ended up using about 3.5lbs of strawberry puree on this and it seems like that was plenty.  But I guess I won't really know until I try it.  If this turns out well, then I might have to get to work on my apple wheat right away.
