Summer Brew



Thought this might work for a Whit for summer. Anyone got any experience brewing one of these? I did see a recipe similar to this but it added 8 ounces of oats .... for mouth feel I guess.

I recently did a very similar brew.  My brewlog is saved on my laptop which is currently being repaired so I can't give you all the specifics but I did use A LOT more coriander and bitter orange peel and I think I used too much but I think I would use more than half a teaspoon of each.  For hops I used Hallertauer and Saaz with a combined weight of 2 oz. Can't remeber specifics but I hopped at 60 min, 15 and 5.

I used 5lbs 60/40 wheat LME and 2lbs light DME.  I wish I used some type of specialty grains because I think its missing a little something; not sure what though. The beer pours great with a nice snow white head and lacing but is way too clear for a white ale.  I used the same yeast and it took a long time to start fermenting ( I think maybe 3 days) and once it did it took forever to ferment out.  I recommend oxygenating or aerating your wort very well and rousing the yeast by shaking your carboy every once in a while.

I recently had an Allagash white for the first time and my white comes pretty close, in taste and aroma, considering I wasn't even trying to replicate it.

If I get my laptop back soon I'll post my recipe, instructions and notes for comparison.
