Ultimate Recipe Book Recommendation
UPDATE: Bottled the Cinnamon Honey last night
OG 1.068
FG 1.012
ABV 7.x%
Appearance: Slightly cloudy despite the addition of gelatin to secondary
Color: Dark gold
Expected first taste date: 02-16-08 (I know it's young, but I like to keep track of progression)
Still smells phenomenal.....
Keep us posted. I think I'm going to make this one ![]()
I can't wait to get to my LHBS to get the misc supplies to get this brew going. I have bunches of honey, I just need to replenish my hop supply. Hopefully I will be brewing this on Sunday.
Jen, what was the specified hops in your recipe?
Heck, while we're at it, what yeast ![]()
1.00 oz. Northern Brewers 7.0% 60 min
0.50 oz. Cascade 5.7%
60 min 1.50 oz. Tettnanger 4.5% 20 min
the yeast wasn't specified but I used White Labs East Coast Ale since it has a fairly general profile for pale ales
Final:
This one turned out really well.
amber in color (on the gold side)
slightly hazy but not cloudy
beautiful head retention
Taste is rich and goes down smooth but it has an interesting little back bite (probably from the cinnamon). Cinnamon smell is subtle and not easily identifiable as cinnamon, but it's there and not intrusive. Its a real clean tasting beer with no floral or honey character that I can detect...
Hard to describe adequately, but the thing that strikes me most about it is that it is a lighter beer but it has a very rich character to it. It's satisfying but not particularly "quenching".....I think it'll be a perfect spring time brew.
All in all I think I will probably make this one again.
Thanks for the update. Sounds good!
Hi Jen,
Just wondering if any of this beer is still around, and if so has it changed? I'm thinking about experimenting with cinnamon, but don't want it to be too strong. Does it work its way back out of the beer, or does it stay in the background?
Thanks for any thoughts! ![]()
