Ultimate Recipe Book Recommendation



I currently have the Cinnamon Honey Ale in primary, and I just wanted to let you all know that I don't think I've smelled a better smelling batch during the boil.  I added 3 cinnamon sticks to the last 20 min and MAN that smells awesome.

It's currently bubbling contentedly away and it still smells fantastic.  I used White Labs East Coast Ale yeast in it since there wasn't a specific yeast called for.

I'll keep you posted, but so far I am extremely pleased with this one.



 

Keep everyone updated on that one. It sounds great! Where did the recipe come from?

I just looked at that recipe.  Man does that look good.  Definitely let us know how it turns out!

 

Racked it over to secondary the other day (Sunday 2-3-08) and man is it cloudy.  Still smells divine though. 

During the boil it was that sunrise copper penny color associated with reds, but it's mellowed out to a dark gold color.  I've had beers get darker (barely, slightly) over the process but I dont think I've ever seen one lighten up after fermentation.... any ideas why?  (or have I just lost my mind, LOL)

 

Hey Jen, what O.G. did you get?  I'm sure there's a calculator somewhere where I could probably just punch the recipe into to see for myself, but I'm still a newbie smile.

 

My initial reading was 1.068. (I imagine it was the 3lb of honey.)

How is Radical Brewing?  Is it a hard book or is it an online book like Ultimate Home Brewers Recipe?

I love the Ultimate ..etc book.  Its got a huge selection of recipes and I love the PDF format.  I can print the recipe out and have it in the area while I work, then I can fold it and lay it on top pf the fermenter for reference purposes for things like secondary additions etc... even though I have a record book for the brewing year, the paper is a great place to do my math and note readings etc before I actually sit down and update my records.

Update on the Cinnamon Honey Ale:

I am completely baffled by the color behavior of this brew. Now it's back to that rich copper penny color (actually, it reminds me of the color of a horse I had as a kid), although it's still a little murkier than I like.  I think I could probably bottle it today;  hydrometer is at 1.018.   LOL but I have to do laundry and clean up after last night first!

 

UPDATE:  Bottled the Cinnamon Honey last night

OG 1.068
FG 1.012
ABV 7.x%

Appearance: Slightly cloudy despite the addition of gelatin to secondary
Color: Dark gold

Expected first taste date: 02-16-08 (I know it's young, but I like to keep track of progression)

Still smells phenomenal.....

I can't wait to get to my LHBS to get the misc supplies to get this brew going.  I have bunches of honey, I just need to replenish my hop supply.  Hopefully I will be brewing this on Sunday.

Jen, what was the specified hops in your recipe?

1.00 oz. Northern Brewers 7.0% 60 min
0.50 oz. Cascade  5.7%
60 min 1.50 oz. Tettnanger  4.5% 20 min

the yeast wasn't specified but I used White Labs East Coast Ale since it has a fairly general profile for pale ales
