Wallonia Saison recipe
This beer took a 1st place in the Belgian category at a local comp recently.
Batch size: 6 gallons
Efficiency: 75%
OG: 1.055
IBU: 38
SRM: 7.5
8.50 lb Weyermann Pilsner Malt
.75 lb Munich
.75 lb Wheat
.25 lb Caramunich
2 oz Special B
1 lb corn sugar added when fermentation slows
Wyeast 3724 Belgian Saison
1.00 oz Sterling (3.6%) - 60 min
1.00 oz Willamette (5.5%) - 60 min
1.50 oz Hallertauer (3.2%) - 10 min
Mash at 146 for 90 minutes
Fermentation Schedule: 68 for the first two days then let it free rise into the 70's. I let it rise about a degree per day and once I hit 80 and fermentation started to slow I added the 1 lb of corn sugar. At this point the SG was 1.020-1.022 prior to adding the corn sugar.
The sugar addition got the yeast rockin' a bit for a short while. Once fermentation slowed again I put the carboy on a heating pad and wrapped it in a fleece blanket to bring the fermentation temp up to 85-86. On day 34 the SG was 1.003-1.004 and there was still a lot of yeast still left in suspension. A week later it hit 1.002 and the yeast had now dropped out of suspension.
I bottled with a champagne yeast because the 3724 is a finicky PITA. It tasted OK for a while but after aging for 6 months its pretty good. This was the first time I made a saison so I was going to go the spiceless route to learn what flavor profile 3724 produces. Next time I'll probably add some spices and have been thinking of using tangerine zest, lemon zest, grains of paradise or peppercorns.
I have used Grains of Paradise several times in my saisons. I usually use about 1/2 oz GOP and 3-4 teaspoons lemon zest per 5 gal batch. Makes for a really crisp and zesty summer saison. Talking about it makes me want to brew it. Might be my next batch.
