What to brew?




Hi guys,

I'm in a bit of a quandary.  I'm placing an order today for replacement specialty grains, but have a brew day available before they all get here.
BTW- I'm fine on base malt, still have about 40#

What kind of 5.5 gal batch do you think I could make with the following odds & ends?
1# Biscuit
2# US Chocolate
1.5# Flaked Wheat
2# Flaked Oats

Hop choices-
Crystal 4.3%
Millenium 15.9%
Cascade 7.5%
Sterling 5.7%
Cluster 5.1%
Amarillo 8.0%
Centennial 9.1%



 

Guess that's not going to be a Mack & Jack.  What  is the world coming to???  big_smile

Looks like an oatmeal stout with some wheat lost in there.  With that much chocolate available, it should make up for the missing crystal and roasted barley, at least in color.  You got to dance with who you brought.  Go with it.

 

Yeah, that makes sense.
How about if I throw some of the chocolate in the oven & roast it a bit.  Maybe pick up a little of the roasted barley rasp., maybe throw in a bit of dark brown sugar???? 

Hey, M&J AA, as soon as the stuff lands.  The keg went empty way too soon.
I guess that's what I get when we host T-Day.

Just not sure which 30min, hop I should use.  None of them are particularly "English" .

I'd suggest the Sterling.  Not English, but probably closer than most of the others.

 

I think you'd be better off making an American Nut brown with those ingredients and hops.
But that's just me.

Just use the base malt, biscuit some chocolate and use the wheat up.

Make cookies with the oats for now.

And for a dude with 40# of base malt why is the extract sneaking in there.  Save it for starters man!

The extract is on account of, I do 5.5gal batches with a 4 gal wort pot on the stove.
The most I can mash is 7-1/2# of grain, which gives me a max of 1.040 OG., so I do a late addition LME, Honey, etc., to pick up the extra points.

Hmmmm, Chocolate Oatmeal Stout, or Biscuit Brown, Decisions, decisions.
