What will this malt bill taste like?




After a quick reglance at your original recipe I see that if you did replace the simcoe with chinook in all of the original additions, that further explains the flavor contribution and not the aroma. A 10 minute addition will give a tad of aroma, but it is really in that last 10 minutes, flameout, or a whirlpool, that the aroma is captured.

I didn't just use the hops for bittering. Since they have such high alpha acids, they did bitter a lot in all the stages, but I added the hops in 3 increments. All equal measurements of .33 oz. I added at 45, 30, and 15. When I just racked, I could smell all of the spices and a light tree aroma. The spices don't shine through too much into the flavor, which I am happy about. The best way I can describe the smell is a Christmas wreath, which was the goal. The flavor however is very close to style, I think. It has some toasted notes; almost a little smokey, with some sweetness and complexity. There is a mild cool mint after taste that accents the smokeyness well. I am happy with it so far. I am excited to see what it tastes like when the malts mature.

 

I work nights now, and It was snowing this morning when I got out of work and I had one of these waiting in the fridge for the first snow. I cracked it open and the magical journey began. It was like opening presents under the tree for the first time. I had no idea what to expect.
I am considering it a success as far as my first all grain batch.
First off, it was way too carbonated for a porter. The aroma was nicely balanced both hoppy and malty. The color was black. Exactly what I wanted. I wanted a nice white head but it turned out more of a light tan. Not complaining, looks nice against the black. When I tasted it, it tasted like a chocolate tree lol. so I think next time I will add a lot more hops closer to flame out instead of in the middle of the boil. The IBUS were perfect. complimented the malt perfectly. I tasted the allspice in the after taste and I wasn't a fan, I might get rid of it next time. maybe just ad a lil clove. I tasted no cinnamon or ginger or mint. I wanted some mint so I might double that next time and take out the ginger also. I also thought there was too much chocolate. All in all its a very smooth and drinkable beer. I had no problem taking down the glass and wanting more. I will make this again next year for sure. I just wont consider it christmasy at all cuz its really not. Its more like a black IPA.
