whos making some eggnog for xmas




any of you make eggnog?? for the holidays



 

I usually do, but occasionally my wife makes a similar coconut drink that is common in Puerto Rico.

 

Eggnog? Would you mind to post the procedure in making it. It's my pleasure to learn how to make it especially now Christmas is past approaching.

Homemade Eggnog
Recipe courtesy Tracy Griffith.

Ingredients:
6 large eggs, separated
1-1/4 cups sugar
1 cup dark rum
1 cup brandy
1-1/2 quarts heavy cream
Freshly grated nutmeg to taste

Preparation:
Combine the egg yolks and sugar in a large bowl; then mix with a mixer until well combined and ribbonlike in texture. Mix in dark rum, brandy and heavy cream.

Beat egg whites until soft peaks form; stir into the egg-yolk mixture. Cover eggnog and chill for a good 4 hours, or overnight.

Grate fresh nutmeg to taste over the top and serve chilled (figure A).

Servings: 10-12

Chef's Notes:

    * This eggnog contains raw eggs. Always purchase fresh eggs with intact shells. As an added precaution, wash the eggs before use, and keep them chilled until ready to use. Individuals with compromised immune systems should avoid recipes that include the use of raw eggs.

    * Feel free to experiment with other liquors, such as bourbon, amaretto and kahlua.

To be honest I usually just buy one thing of eggnog at the store.  My wife doesn't drink the stuff and by the time I get through one I'm usually done for the season.

I haven't made it myself. I've bought a carton or two in recent years because it is nostalgic for me. My mother made it when we lived on a farm.

Home made egg nog is sooo much better then the stuff in a carton.  Its the difference between homebrew and - um - budweiser.
An important key, as stated in the recipie, is to beat the egg white seperately.  Then fold them in gently.  The result is like the foam on a latte - really light and good.
You can use rum, brandy, or any liquor you like - or just drink it without.  I usually add the liquor in the glass then pour in the nog

Alton Brown from the Food Network did a show about Egg Nogg.  This recipe is pretty similar to his, but you may check out their web site for some other ideas about recipes.

And just as PBergler says, homemade egg noggs are so much better than store bought.  I am not even sure where the store bought recipe comes from, because I honestly can't see any similarities between the store bought and homemade.  A lot like Bud and homebrew.....

 

Now I know it very well. My aunt used to make eggnog and sold it in the market. I just don't know the real term for that. I used to call it in our own dialect term not eggnog.lol

 

after reading that recip, it may make me change my mind about it.
I can use artificial flavors, cant I.. or does the liquor add to the texture and chemistry of it.
It seems like a really good meal style drink too.......
like those white russians and the brandy alexanders shakes.......

 

My mom used to make eggnog every Christmas, much like the earlier quoted recipe.  I make it occasionally (not just for the holidays) and have made it without alcohol many times.  It is tasty either way, in my opinion.

One thing I tried this year is an old-fashioned rumtopf, something my Bavarian mother's parents used to make.  Fresh summer fruits are tossed with liberal amounts of sugar and then placed in a crock (or in my case, a large glass cookie jar) then covered with rum.  New fruits, sugar and rum are added as the fruits become available. I started it in July, with the last summer fruits added the end of August.  I'm serving it with Christmas dinner (which we are having with my parents).  A little taste a few days ago showed the stuff is going to be quite potent smile

Adding artificial flavors sounds good but I haven't tried it. Do you think it taste good?

 

Might I say, after reading this thread I decided to give eggnog a go and it came out great!! Some eggs, whole milk, heavy cream, nutmeg, sugar, Hennessy, and a whole lot of manual whipping!
