Will this change anything?




I am in the process of making a sweet stout I've made several times. It did well in a contest so I didn't want to change anyrhing but when I went to LHBS they didn't have victory malt in small amounts, just 10 pounds and I didn't want to buy that much.

Here's the recipe and changes I made for the heck of it since I couldn't get the victory malt and didn't want to wait for it by mail. Curious as to comments and if anything might be different in the final product.

4 pds amber DME
3/4 pd debittered black patent malt
3/4 pd chocolate malt
1/2 pd honey malt
1/2 pd caramel malt 40 L
1/2 pd light wheat malt
1/2 pd victory malt
1/2 pd molasses
1 pd lactose

target hops pellets 60 min

muntons dry yeast

that's the origional recipe.
couldn't get the victory so I replaced it with 1/2 pd carapils. And for the heck of it I added 1/4 pd quick oats and steeped all the grains for 30 minutes at 155 degrees.

Added the oats as I thought it might make the mouthfeel a little creamier.

So what difference if any will there be by replaceing the carapils for the victory or are the amounts too small to make a difference and was it enough oats or should I have added more?

Victory adds toasted graininess to the brew.
Cara-pils adds nothing in the way of flavor, just a little head retention, but the fat from your oats should negate that contribution.

In the future I would have looked for some biscuit malt (the english equivalent of Victory)  Or I would have looked for some carafa red or a lightly roasted malt, like a pale chocolate.

In this stout I doubt though that you'll really miss it.
