Youngs Double Chocolate Recipe
Does anyone know where i can find a recipe for Youngs Double Chocolate stout? How about a good white ale recipe?
Bottled: Berry wheat
In the Kegerator: Shiner Bock clone
Secondary: Breakfast Stout
What are you trying to make? Oreos?
According to BYO's 150 clones issue:
OG- 1.053
FG- 1.013
IBU-28
SRM-35
6# 2row
11 oz crystal 60
13 oz choc malt
12 oz lactose
8 oz invert sugar
4oz cane sugar
6 oz cocoa powder
.33 oz liquid chocolate extract
1.4 oz fuggle 60
.25 kent goldings 15
Wyeast 1318 london 3
mash 153
add sugars and cocoa 15 minutes left of boil
ferment 68
add essence to secondary
There is also a note "Young's website claims that their DCS is made from pale, crystal and choc malts, with a 'special blend of sugars.' This stout is fairly sweet and we suspect the brewery probably adds sugar before bottling and then pateurizes the beer. We went with a bit of lactose, which brewer's yeast cannot ferment instead. Youngs also adds 'real dark chocolate and chocolate essence' to this beer. You can use more or less choc extract to taste."
Hope that helps!
Thanks for the Help! "Oreos" funny... I really like youngs DC and would like to have it on tap.
I find the Young's a bit too sweet. What I did last year was brew an oatmeal stout and add about 10 oz of cocoa powder at the end of the boil. It was really good. It got me through a 4 day power failure here last winter.
Make sure the cocoa is pure cocoa.

I make a sweet stout with 1 pd lactose and 1 pd choc malt, along with Molasses. It's plenty sweet for me. I don't use cocoa powder or choc extract. Might not be sweet enough for ya. I never tried Youngs.
DC
My next brew but one is going to be a Chocolate Milk Stout. I had it at Cambridge Brewing Company last winter and it was amazing. Basically a sweet stout recipe with the 10 oz cocoa powder.
