Airlock
An airlock is a device used to allow air to escape from a Carboy during the fermentation process.
There are actually several different styles of airlocks for home brewing, but the concept is the same for pretty much every lock. Air is allowed to escape by passing through liquid, but no air (and more importantly foreign substances) are allowed into the carboy. This keeps substances that could ruin the final beer out of your batch.
Many people use vodka rather than water in their airlock. Vodka will kill any insects that may try to get into your beer, and if the vodka happens to make its way into your batch, it will not harm your beer at all.
