Decoction
Decoction: To extract by boiling. In brewing parlance, the mashing process whereby a portion of the mash is removed, boiled, and then returned to the main mash in order to raise the temperature. Decoction is primarily thought of as a German method designed to work with undermodified malts for consistent temperature control before the invention of the thermometer.
