Hos do you establish the gravity without a gravity meter?
What did they use in the "primitive" days?
I don't think you can really determine gravities without a hydrometer. Well, there are other ways, like a refractometer, but none of which are cheaper or easier than a hydrometer. I'm not sure what you mean by "primitive days" but hydrometers date back to the 1800's. Before then I'm guessing it was just an educated guess as to when a beer was finished.

You can use a refractometer, but there are conversions to mke, and it can't really be used on the finished product because the alcohol can skew the light bending properties. It's good to have so you can check gravity of mash, runnings, and during boil. You still need a hydro to confirm. There is a website that does the cals for you, but I prefer to do it myself...
