HERMS




HERMS is an acronym for Heat Exchange Recirculating Mash System.

This is a method similar to RIMS for raising your mash temps for step mashing, except your mash doesn't get exposed to a direct heating element.  you would use a counterflow device or some sort of coil and circulate/pump your wort through a water bath. This water bath can either be your HLT (hot liquor tun) or a standalone container.  I've seen water heater elements installed in corny kegs, with a coil running around it.
