Specific Gravity
A measure of the density of a liquid relative to the amount of fermentable sugars it contains. By testing a beer's specific gravity it is possible to determine when the beer is done fermenting and to know in advance how strong the beer will be.
Again, not trying to be a jerk, but isn't Specific Gravity technically a measure of the density of an object, in our case wort? That would include fermentable AND non-fermentable sugars, right? Just because a sugar is non-fermentable doesn't mean that it won't add density. This measurement is relative to the measurement of a reference object, in our case water, which has no sugars. Also, the measurement is temperature specific.
I guess this was more of a question than a statement, maybe we have some chemists out there...
