Striking
I do not know what this means but I heard beermakers talking about it.
When mashing, the first batch of heated water used to dough in is referred to as the strike water. Striking in is another term for adding the hot water with the grains to make the yummy wort......
Perhaps you are thinking of strike temperature.
Strike temperature is the needed temperature of the brewing water before its added to grain. The strike temperature is generally higher than the intended mash temperature because some heat energy will be lost to the cooler grains once added together in the mash tun. Brewers generally, have a "dialed" in concept (through experience with their personal equipment) of how many degrees over the mash temp their brewing water needs to be.
Striking-in then would be a phrase to mean the water is heated to strike temp.
Or it could just mean beating you lame assistant brewer with a cane.
