Acidex ?



Hello...

I read a everything I have about acid reduction (from several books I have) including the excellent articles at VAWA.net and have "searched" this site.
I still have a question about Acidex. Can this be used "after" fermentation?

You can try with Potassium bicarbonate. You may also check calcium carbonate at the same area of this web site. Pot. bicarbonate can be used after fermentation as long as the PH is 3.5 or lower.

This may be a bumb question but is Acidex and Potassium bicarbonate the same thing? Is Acidex just a "brand" name?

 

No, they are not the same. Acidex is a double-salt seeded calcium carbonate designed to reduce both tartaric and malic acids in juice or wine. Potassium bicarbonate just reduces tartaric. Very different stuff.

But if we have PH lavel Grater than 3.5 then what to do with it?

 

When I was in college, I remembered this theory. For instance, wine with a pH of 3 is 10 times more acidic than a wine with a pH of 4. The thing to remember about pH is that the higher the pH, the lower the acidity, and the lower the pH, the higher the acidity. So a wine with a pH of 4.0 is LESS acidic that one with a pH of 3.6. Although total acid and pH are related, they represent different ways of measuring acidity of wine. What do you think? Any comments about this?
