Dandelion Wine

I picked 9 qts of dandelions today and will be making a dandelion wine. Not sure which recipe yet. Bottling a plum wine today also.

This actually inspired me to try making a lilac wine.  It's been fermenting about a week now.

 

I used the flowers green part and all. It smells like spinach so far. Added 2 1/2 gallons ofboiling water to fermenter with flowers in it. Will let it seep covered 2 days, strain inot pot, bring to boil and add other ingredients and put in glass carboy or back into crock container.

I'm interested in the lillac wine. We have a lliac bush beginning to form buds and I would like to make wine out of them. Rhubarb will get made into wine too when it's ready to pick.

Where are your fermentables coming from in this wine?  Flowers don't have much if any sugars.

 

Sugar.

Recipe calls for about 3 lbs of sugar per gallon.
