Fermentation has stopped what to do?




Hello Everyone,

I have decided to graduate from making pruno in carlo rossi jugs to making some real wine. I have tons of blackberries growing in the yard.
I picked 20 Lbs of berries and put them into a nylon bag and crushed them. I added 11 1/2 lb of sugar and only 3 gallons of water(the recipe called for 4 1/2 gallons) before it filled my 6 gal primary fermented to the top. I added 5 tsp of brown nutrient and 2 tsp of the white nutrient. 2 1/2 tsp peptic enzyme, 2 1/2 tsp acid blend and 5 crushed campden tablets. I let all of that sit overnight covered at about 65-70 F. I used a triple scale hydrometer and got a PA of 15% or about SG 1.116.

I then added 1 package of Lalvin k1-v1116 yeast after following the directions for activating it in water. Within an hour or so, the bubbler started bubbling showing that it was fermenting. Not real fast, maybe 1 bubble every 10 seconds. Well the next day it was going a little slower, and I started reading some more. I read that a starting SG of more than 1.110 could lead to a stuck fermentation. SOOOO I decided to crush and remove the berry pulp so that I could add the other 1 1/2 gallon of water which I ran through the pulp to get out of it what I could. This changed the SG level to 1.096 or about 12.5% PA. Now my fermentation has stopped. I even added another package of the Lalvin yeast and still nothing. What should I do? The temp is 70F.

Hey alexander,

First of all, I think your wine was fine before you watered it down. I would have just let it go and I would not have removed the berries. Your wine will probably be thin now  . Usually I ferment my blackberry on the pulp for 5-9 days.

If it's not fermenting, try making a yeast starter culture. Make sure your yeast is fresh and not from last year. Do a forum search for "starter culture" for some additional directions. I would do a 12-hour culture and then pitch that. I would be surprised if your wine completely stopped fermenting though. It might just be in shock and will restart by itself.
