Have any recipes or recommendations?
I would like to make wine w/o any sulphites added. Right now I've just made a couple of batches from kits with the suphite added. I made 1 batch from fruit- from muscadines and did not add any sulphites although the recipe called for it.
I'm nervous using a recipe or kit that calls for sulphites and leaving them out. But I know you can make good wine without the added sulphites.
Does anyone out there make wine w/o sulphites added? Have any recipes or recommendations?
I have one friend that does it, but he makes wine sooooo unorthodox (some ways traditional) I’m not going to try to recreate his methods (it includes stomping and garbage cans!)

No I don't feel that I taste the sulfites. If I were making it from scratch I would just rather leave them out for the health of it.
I have no problems with the way that my friend makes his w/ stomping etc but I can't (and don't wish to) recreate his methods for various reasons. But I will drink his wine! I just wanted to know if anyone in this form doesn't add sulfites and their methods for making w/o sulfites added.
I think I will contact some organic vineyards/wineries that don't add sulfites.
