How much to oak




Hey Guys!

I have 3 gallons of blackberry wine bulk aging. It's still just a bit gassy, and a tad bit "weak" tasting. I'd like to oak it. Now, the question is: how much? I bought French oak chips. Do I boil them a bit first, then put them in the carboy and rack my wine into it? How many ounces?

Dear cayden,

For the 3 gallons of wine you have, I would add 1/2 ounce (15 grams) and see how it was in a week or so. If still a bit weak, leave it for another week. If it is still weak at that point, you could add another 1/2 ounce of chips.

The oak chips you add will give up most of their oak in about 10 days.

Be careful putting the oak into the carboy, as it will foam up if there is significant CO2 in the wine. Degassing first may be appropriate.
