Making wine from frozen fruit
Hi All,
In my freezer I have raspberries, blackberries and whitecurrants, which I want to use up in some nice fruit wine. Anybody got any tried and tested recipes that could use all three? I have only made a kit wine before, so I am a bit nervous.
Hi jacab,
I've grown blackcurrants for some years and often to put them in the freezer to avoid deciding to what to do with them. There were quite a few bags in there but I didn't think much about them.
Last November my freezer packed up and largely defrosted so I did a triage operation on all the contents (friend's freezer, use now or throw away).
The fruit didn't smell odd and I didn't feel that it would be dangerous but I was a bit worried about eating it direct so I made several batches of wine. I reasoned that if the yeast enzymes were happy to digest the sugar without being poisoned, I'd probably be OK too.
The wine seems the same as using much more recent fruit.
I'm too embarrassed to admit how long it had been there but some years. Yes. Quite a few. Remember Tory governments?
But I promise not inflict it on anyone else not until I've sampled it MUCH more thoroughly.
so far ive mainly done referminting of wines but i almost always use frozen berries(only time i havent was on the pumpkin pie wine) and people seem to like it...had a friend i gave a bottle to last year asking when he could start begging for another bottle a few weeks ago
