My first attempt To Make Wine... Stuck Up !! Help Needed plz..

Hi, I am Abhijith , from India, and a total newbie in making Wine..

I was amazed by the info and description about the wines and desperately wanted to make the wine on my own.
So I googled for “Home Wine Making “ and found a few stuffs about it on websites and blogs, and its on way.

As I am a beginner , and a country like India where its hard to find the people who make wines or own a Wine Yard. I tried searching for the accessories for making wine couldn find many of the stuffs and chemicals such as  pectic enzyme,yeast nutrient etc.. .

Well.!! Coming to the problem, I am stuck in between the process of the making wine..
I did follow the steps which was on your site and at start every thing seemed to be on the smooth run but suddenly I found something is wrong with my wine..

There are two separate parts of wine which is on experiment..

Procedure that I was on :

  I decided to make two parts(i mean two batches ) of wine in two separate jars, each part has about 1.25 gallon of grape juice, 2.35 kg sugar added to boiling water(1.0 gallon) ,the sugar sol was cooled before it was poured to the grape mixture.
  I washed the grapes in slight warm water,destemmed it , and  then crushed it thru my hands and separated each the seeds from there pulps and used the grinder to grind the pulps,
Then for about 1.1 gallon hot boiling water I added 2.3 kgs of sugar and stirred it well, when it was still warm I poured it into the jar containing crushed grape juice ,
and I let this solution for more than 24 hours ,
later I added potassium meta bi sulphite and covered it with a thin cloth, after 24 hrs I would add about 12-15 grams of Yeast to the solution to begin the primary fermentation with the jar opened and a thin cloth covered…
(i kept the jar in a trough of water which was about 80F during primary fermentation)

Later after 4 days I had plans to add more sugar and some of water and close the jar air tight for about a month
Which would be the secondary fermentation..
Later I would check if the fermentation had stopped and would filter the solution and add More Pottasium meta bi sulphite and potassium sorbate and fill the bottles…

My problem below :


The first one went fine with Primary fermentation and when it was about to be transferred into the fresh jar for the secondary fermentation , I found the solution to be bit bitter and its smelling too alcoholic , as said I am out of reach of instruments which can check for the acity levels, gravitation,etc and all… so I think its clear from this that I’m on lame method of preparing wine informally,
Does that bitterness means my wine is spoilt ?????

And

The second jar(containing about 1.25 gallon of grape juice, 2.35 kg sugar added to boiling water(1.0 gallon) ,the sugar sol was cooled before it was poured to the grape mixture),
It went wrong at initial stage itself, after desteming, crushing of grapes, I left the solution for 24 hours and could see froth which u said its due the fermentation which was initiated by the wild yeast.
I went wrong while adding Potassium meta bi sulphite, the amount was about  1.25 grams , and I left the solution for 24 hours so that I can add yeast for the primary fermentation to begin,
But after a few hours itself I felt a pungent smell from the mixture(I think its SO2),
And after 18 hours I tasted the mixture, I feel its too odd , (the solution was tasting almost sweet before Potassium meta bi sulphite was added, I am worried that this 2nd mixture is also dead….

Before this post reaches and you would read this its gonna take time… so I would have added Yeast
to the 2nd mixture(on 31st jan 10.00 P.M IST)  and let it for the primary fermentation to begin.

Please guide me repairing my 1st n 2nd wine and give me some tips…
