need some advice

Ok, I have just recently purchased a home wine kit.  6 gal etc.. I do not know alot about wine but I know i Like a very sweet red wine and sweet fruit wines.  I could use some advice on making some sweet red wines.. my wife and i do not like the bitter wines.  could someone send us in the right direction.

 

My wife only likes sweet  white wine. So I make 5 gallons of orange and pineapple, using 1 litre cartons from the supermarket, (to make a red wine you can use cranberry juice)as follows:
9 x orange juice
9 x pineapple juice
equals about 4 gallons.
add pectolase then a day later the yeast
when vigorous ferment has subsided add 1 kg sugar dissolved in enough water to bring up to 5 gallons.
Ferment to dryness, rack and fine, then add sugar to taste, a bit at a time until it's to your taste.
