raspberry mead
I checked my blueberry mead Sg was 1.000. Estimated initial gravity was at least 1.070 (2lbs honey/gal & 0.75 lbs blueberries/gal - 5gal batch). So this should have about 9-10% alcohol in it. It was a bit dry & had a strong alcohol character for my tastes, so I added 5 lbs of honey by racking it into another container. Sg now is 1.034, and I am getting a tiny bit of krausen on top of te mead. Sweet with a hint of alcohol.
I started this batch just over 1 month ago and used Muntons generic dry yeast.
Raspberry mead I started 1 week later using Muntons gold plus yeast tested at about 1.020. Essentially the same recipe with the exception of the fruit & yeast used.
This yeast is working great!
Thanks

I've got a blueberry cyser that's about 3 months old at this point. It's extremely dry. The recipe went something like:
5 gallons of exceptional cider
10 lbs. clover honey
2 lbs. organic blueberries
Champaign yeast (750 mL starter)
Yeast nutrient
It tastes and smells pretty darned good but it's got to age a long while. Maybe I'll try some in the fall. I can't remember the OG or FG, but it's about 10% ABV. At the risk of offending HotCha, I'll admit that it may get some splenda to offset the extreme dryness. I'm curious to hear how dry your mead gets. Those blueberries sure do encourage the yeasties.
Thanks
Kai
