Recipe was for five gallons; I made six -- how affected?



I recently finished making a batch using Suncal's White Zinfandel concentate.  It was only well after the fact -- actually after bottling -- that I realized it was a five gallon recipe and I made six.  I just naturally topped off my six gallon carboy after ever racking, not really thinking about it.  Otherwise I followed all directions to the letter. It's been a month since I bottled it, and my wife and I popped open a bottle last night.  It's drinkable, pretty good actually.  However it does not seem as strong -- ABV wise -- as I might have expected, and the color has "lost" it's blush since it was in the carboy, it that's possible.  I did add an antioxidant before bottling, so I don't think that's an issue.

Would anyone have insights on how "watering down" the recipe might have affected the final wine?  Like I said, it's not bad, but not exactly what I was expecting.



 

Well its 20% less strong in flavor, color and flavor than it would have been.
One gallon is 20% of 5 gallons, so that's where I got that # from.

 

the most important thing is that it tastes good. If you like it then don't worry. just remember net time you make it it's a 5 gallon recipe. it's a good way to see the difference in the same recipe but adding a gallon of water to it. you basically made a lite wine. nothing wrong with it at all.

if that happen before you bottle it you can add a can or two of frozen juice, apple, grape, or a combo to bring it back up to where it should be gravity wise.

that's the only effect; weaker taste and abv. as long as it tastes good, who cares, tho  ;-)
