typical lag time for wine?
I have been making beer for a while now and I bought a wine kit (Vinters Reserve Merlot) to give a try. I followed the directions to fill up to 6 gallons and took a hydrometer reading of 1.083 when the directions said to make sure the must was between 1.070 and 1.080 but I didn't feel I had enough room to dilute it so I left as it was (Just figured it would be a fuller body).
Now the questions is how long is a typical lag time for wine? I'm used to the beer I make taking less than 6 hours every time. I read in the directions 24 to 48 hours and it is now approaching 36 hours. Should I run to the brew shop to get another packet of yeast? The brew shop will be closed tomorrow and if I wait until the 48 hours is up it will be closed today.
