using a Brew King Chardonnay kit

Hi ,

I recently made my first batch of wine using a Brew King Chardonnay kit. The wine came out pretty well for my first kit but the reviews suggest that it is a little light in flavor.

The Brew King kit came with 7.5 liters of juice for 6 gallons of wine. I'm think of making this exact same kit again but actually only making 5 gallons to see if the flavor becomes a little bolder.

Does any one have any suggestions or thoughts on this?

1.    I have experimented around with the same idea myself. I make mulberry wines from scratch. some recipes call for 3 pounds, some call for 6 pounds per gallon. It all comes down to one thing, personal preference. I do know that one can over do it when it comes to flavor. The key to winemaking is keeping every detail balanced. That’s what makes acidity and tannin so important. Like brewing beer, experiment until you find what you like, just do not go over the edge (unless you want to pitch a batch). g'luck!
2.    If you make a 5 gallon batch, the acid will be out of balance. Why don't you get a better kit (say a Winexpert Selection or Spagnols Cellar Classic) ? You can get great prices from Austin Homebrew.
3.    Both of the above responses bring up great points. I'll bite the bullet and go with a better kit.

The wine that I've got now is enjoyable and it's better than some $5 bottles I've had but there is certainly room to improve it.

Do the chardonnay kits do anything to mimic the oak taste? I like the taste, and I assume it comes from the barrels used in the commercial process.
