Wine Kit Instructions?



So I'm making a cab from a wine kit and the directions are all very similar. so wait 5-7 days, gravity 1.010 or less then rack and wait 10 days and stabalize. Well on my 6th day the gravity was .994, I racked it to the carboy and decided to check it today it is .994. So my question is if the gravity is already below what it's supposed to be after I wait the 10 days, can I just clear it now and degass it? Also iIchecked the accuracy of the hydrometer to see if that was it and its accurate. Water reads at 1.000. Let me know what you think. Thanks



 

Question-  Did you take a SG reading before pitching your yeast, and if so, did it match the instructions in the kit?

 

Yeah,I did it was sopposed to be between like 1.070 and 1.085 and it was 1.080. Although it says to pitch the yeast when its between 65 and 75 degrees I pitched it when it was 80, but I did that in my first batch and it turned out great. my basesment stays at a steady 68 degrees. I have 2 batches of the same cab right now and the first one didn't act like this. I just need to learn patience when it comes to this hobby but why wait another 10 days if the gravity is at the required level. Your thoughts?

 

If you started a little high in temp you would ferment faster, and possibly get some off flavors.  Letting the yeast work longer will help get rid of them.  I would let it sit for the full normal time, and let your yeast do it's work.  I don't understand the lower FG, though.  Unless the yeast you used had a higher alcohol tolerance than the one the kit instructions assumed. hmm



 

I'm still new to wine making, this is my 3rd kit, it's just strange that I started the same kit a couple weeks ago under the same conditions, same temp and all. It even started out as the same SG 1.080 but the second one's gravity just dropped all the way down. I guess regaurdless of where the SG is at this point, I will wait  until the 10 days is up and then clear it. Thanks.

There is one thing though......And this will explain why I have 2 cabs. When I recieved the first cab I opened the box and there was grape goo on the inside of the box. I called and said well if grape juice is getting out that could mean that micro organisms to spoil it are getting in. I'm still new but know that sanitation is very important. They sent me another cab to replace it. I made the gooey one anyway. However the gooey one is the first one that is acting normal and the 2nd one fermenting (the one with the low SG) is the replacement.

 

If you used campden tablets before adding the yeast you should be fine with the first one,
